The InsectFish project aims at promoting sustainability in the fish sector by using insect meals in fish production. The final objective is to investigate the quality, nutrition profile, sensory evaluation, and consumer perception of fish fed with insect meal compared to a traditional fish.

WP1 Fish farming

Objectives:

O1.1 Lowering the ecological footprint of the aquaculture sector using insect meals.
O1.2 Farming insect-fed fish to reach marketable characteristics.
O1.3 Production of seabream fed with insect-based feed as the final product to be tested.

WP2 Stakeholders’ and Consumers’ Perceptions

Objectives:

O2.1 Understanding the barriers and drivers of including insects as an alternative sustainable feed ingredient in aquaculture for stakeholders.
O2.2 Exploring consumers’ perception towards purchasing and consuming insect-fed fish, including the role of information on the perceptions.

WP3 Analysis of products’ characteristics

Objectives:

O3.1 Understanding the effects of the different diets on the morphological and quality evaluation of the whole fish.
O3.2 Understanding the effects of the different diets on the chemical composition of the fish fillets.
O3.3 Understanding the effects of the different diets on the quality of the fish fillets.

WP4 Sensory evaluation of insect-fed fish

Objectives:

O4.1 Establishing opinions, perceptions, and sensory evaluations of food experts on insect-fed fish in comparison to conventional fish.
O4.2 Evaluating the sensory dimensions of consumers toward seabream produced with insect feeding in comparison to the conventional one.

WP5 Consumer Preferences and Willingness-To-Pay (WTP)

Objectives:

O5.1 Eliciting consumers’ preferences and WTP for insect-fed seabream.
O5.2 Understanding the effect of information and sensory attributes on consumers’ preferences and WTP.
